Cake As Art – Art As Cake
This coming Monday evening learn about the techniques that created the masterpieces accompanying this week’s column. Pastry chef extraordinaire and Rockaway resident Cynthia Peithman, owner of Cakeline, will be guest presenter at RAA’s monthly meeting, which starts at 7:30 PM in the Chapel in Fort Tilden. She will demonstrate and discuss decorating her cake creations using the technique of airbrushing. That’s right – airbrushing. A Q&A will follow.
Cynthia’s background is extensive. She holds degrees from the School of Visual Arts and the CUNY Tech Hospitality Management Department. While attending culinary school, she made cakes for two local restaurants, to earn some cash. One day one of the owners asked her to make a wedding cake and the rest, as Cynthia says, is history. She fell in love with what she was doing. She had always wanted to be an artist and had found her natural medium. It was fun, delicious, creative and fulfilling. It also allowed her to work at home in order to be with her young children. As a bonus, Cynthia derives a great deal of satisfaction from contributing to the joy of an occasion such as a wedding. She feels she is adding to it and is a part of it.
Cynthia studied the decorator’s art from many renowned and accomplished decorators including Betty Van Norstrand, Eleanor Reinlander and Nicholas Lodge. She has held such positions as assistant Pastry Chef for the Delegate’s Dining Room at the United Nations, Pastry Chef for Glorious Food and Senior Cake Decorator for the Water Club. She has had cakes featured in Bride’s magazine, New York Weddings magazine and In Style Weddings magazine. This past summer one of her cakes was featured on the Today Show. Sculpting for Beginners-
Instructor: Yevgeny Zanis
8 week course, 2 hr sessions
Fridays: 7:30 pm - 9:30 pm
Location: Building T-6, Fort Tilden, Rockaway.
The student will be introduced to clay modeling tools and techniques, proportion systems, anatomical concepts, planar structure and the use of light and shadow to demonstrate the form of the head.

6 week course, 3 hr sessions
Saturdays: 9 am - 12 pm, starting 4/26 and all Saturdays in May.
The RAA family suffered two losses recently. Dee Dickason was a writer and a free spirit who frequently contributed to our newsletter and column. A memorial will be held for her on Saturday, February 8 at 2 PM in the home of her daughter Virginia, son-in-law Patrick and their children in Montebello, NY. For further information contact the RAA office. Gloria Warshofsky was a longtime member of RAA. She was an artist, expert antique collector and a beloved and highly respected community activist. She loved Rockaway and knew it from one end to the other. She was a member of the community board and led one of the most successful civic associations in Rockaway – the Bayswater Civic Association. Gloria was honest, fair, tenacious and a great leader. RAA’s deepest sympathies go out to the families and friends of these two women. We will miss them.
